Gluten-Free Cookies

Since I have gone gotten free, there are just some things I miss. I wonder if I can make a favorite food without gluten? I also wanted to make a little cookie skillet in my trusty №3 cast iron pan. I have also wanted to try making ice cream sandwiches using homemade cookies. So, I made these white chocolate macadamia nut cookies. I couldn’t find my hand mixer to use so I put it in the blender and liquified the mixture instead of creaming it. I then had to add an additional flour to help. I used Pamela’s Multi-Purpose Gluten Free baking mix for this recipe. I also used a sugar substitute (either pure stevia or monk fruit sweetener)for the granulated sugar and coconut sugar for the brown sugar recipe turned out and is simply divine! I got my little cookie skillet as it baked perfectly and I put the rest of the cookie dough, which is hand-shaped, in the freezer for use later. Since making this recipe, it encourages me to try other recipes that I have not had in a while. I’ll include two links below for the blend of flour I used plus the recipe.
